Ingredients
- one 3 pd pork loin roast
- 3 cloves garlic cut in slivers
- 2 T rosemary fresh chopped
- 2 T fresh thyme chopped
- 1 T olive oil
- 1 t salt
- 1/2 t black pepper
- 2 c unsweetened applesauce
- 2 medium pears ripe peeled cored and sliced
- 1/4 c fresh chives

Preparation
Step 1
Preheat oven to 400
poke 24 slits with a knife in the roast and insert garlic into slits
in small bowl combine rosemary, thyme,oil, salt and pepper-rub mixture all over roast
line a large roasting pan with foil-place pork on a rack in prepared pan-roast uncovered until a meat thermometer inserted in center registers 160 about 1 hour
meanwhile in a med bowl combine applesauce pears and chives
transfer pork to cutting board and let stand 15 mins before slicing
slice pork and arrange on platter-spoon any pan drippings over pork
serve applesauce in small bowl on the side
