PASTA SALAD

Ingredients

  • 1 Box Rotini - Cooked
  • 2 Hard Boiled Eggs - Mashed Finely
  • 3 - 4 TBSP Mayo or More to Taste
  • 1/3 - 1/2 Bottle Wishbone Italian Salad Dressing
  • Assorted Chopped Vegetables - Carrots, Celery, Peppers, Onions, etc.

Preparation

Step 1

Cream eggs with mayo and add Wishbone dressing for the sauce. Mix in chopped vegetables and refrigerate for at least 1 - 2 hours. Keep cooked pasta separate until 15 minutes before serving. Toss lightly, add salt and pepper (I also shake in some parmesan cheese) and put back in refrigerator.

Pasta can be made ahead of time - drain and toss with a little olive oil and put in refrigerator.
