Ingredients

  • One chicken, cut up , or just thighs and legs as you wish
  • 1 small can tomato sauce
  • 2 cups red wine
  • 1 onion, halved and sliced
  • 2 cups sliced mushrooms
  • 2 crushed garlic cloves
  • 3 tblsp rosemary, if fresh, 1 tblsp if dried
  • Olive oil
  • Salt and pepper to taste

Step 1

In a large braising pan add enough olive oil to sauté onion and mushrooms. These need to get browned. Now add the chicken pieces to brown. Add the garlic and rosemary, salt and pepper. When Carmel colored add the wine and bring to boil for a few minutes. Now add the tomato sauce and let this braise for at least an hour. Covered.
The trick is in getting enough color on the onions.
I like to serve this with rice or poor man's spaghetti.
