Ingredients
- 1.5 to 2 lb. flank steak
- salt and pepper
- 1/4 flour
- 1 red onion, sliced
- 1/4 cup condensed beef broth (undiluted)
- 1/4 cup chianti or port wine (I have used merlot, cab and shiraz all worked fine)
- 10 oz. mushrooms, cleaned and sliced
- 1 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- 1/4 cup blue cheese
Preparation
Step 1
Season steak with salt and pepper. Coat both sides with flour. Place on bottom of crock pot so steak lays flat (as flat as possible). Spread onion slices on top. Whisk together condensed beef broth and wine, pour over onions. Spread sliced mushrooms over top, drizzle with olive oil and balsamic. cook on low 8 hours or high 4-5 hours. Add blue cheese 15 minutes before serving to slow cooker and stir.
