Ingredients

  • 1 tablespoon olive oil
  • 1 large red onion, thinly sliced
  • 3 cloves garlic, minced
  • 4 medium zucchini, cut into rounds
  • 1 (8-ounce) can tomato sauce
  • Salt and pepper

Preparation

Step 1

In a large skillet, heat the olive oil over medium-high heat. Add the onions and garlic. Cook until the onions are tender, 3 to 4 minutes. Add the zucchini and cook until the zucchini is almost tender, 4 to 5 minutes. Stir in the tomato sauce and cook until the mixture is heated through. Serve immediately.
