Macadamia Lemon Bars

Ingredients
- CRUST:
- 1 cup flour
- 1/4 cup icing sugar
- 1/2 cup butter, melted
- 1/4 cup chopped macadamia nuts
- FILLING:
- 1 cup sugar
- 2 tbsp flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 2 tbsp lemon juice
- 2 tsp grated lemon zest
- 2 tbsp chopped macadamia nuts
- icing sugar

Preparation
Step 1
Combine crust ingredients and press into the bottom and 1/2 inch up the sides of a greased 8 inch square pan. Bake at 350 degrees F for 15-20 minutes or until lightly browned. In a mixing bowl combine the sugar, flour, baking powder and salt. Beat in the eggs, lemon juice and zest until light and fluffy. Pour over hot crust and sprinkle with nuts. Bake for 10-15 or until lightly browned. Cool completely on a wire rack and then cut into bars and dust with icing sugar.
