Steamed Vegetable Plate with Tofu

Ingredients

  • 1/2 red onion, sliced or chopped
  • 2 medium carrots, cut into coins
  • 2 heads baby boy choy, stems sliced
  • 1 c broccoli florets
  • 1 c snow peas or green beans
  • 1 small red, yellow or green bell pepper
  • 1 c baby spinach leaves
  • 1 garlic clove, minced
  • 1 t fresh ginger, finely grated or minced
  • 1/2 diced organic firm tofu
  • 1/2 t salt (optional)
  • 1/2 t crushed hot chili flakes (optional)
  • 2 T cilantro, chopped
  • 1 T sesame seeds

Preparation

Step 1

Toss cut vegetables together in a bowl with ginger, garlic, chili flakes and salt (if using). Steam vegetables over the stove top using a steamer insert. Add tofu to steamer during the last minute of cooking time just to heat through. Transfer vegetables and tofu to serving dishes. Sprinkle with chopped cilantro and sesame seeds. Serve hot.
