Squash Casserole

Ingredients

  • 6-8 yellow squash
  • 1 pkg stuffing mix
  • 1 cup sliced mushrooms
  • 1 med onion, sliced
  • 1 can cream of mushroom (or cream of chicken) soup plus 1/2 can water
  • 1 stick oleo
  • 1 cup shredded cheese
  • 1 lb ground chuck, which has been fried & drained

Step 1

Slice squash and place in large pot covered with water; boil til done 20 mts. add onion 5 mts before squash is done.

In 13" x 9" greased pan, layer a single layer of dressing. Save some for topping. Next layer drained squash (reserving 1 cup juice) which has been mixed with other veggiew. Place 1 layer over stuffing mix, top with 1/2 of fried ground chuck; top with remaining squash & again with ground beef. Place cheese over this. Then pour soup over casserole. Dot with oleo & top with remaining stuffing mix.

Bake @ 350 degrees for 30 mts
