- Crust:1 cup butter
- 1 cup sugar
- 1 egg
- 1 teaspoon lemon extract
- 3 cups all purpose flour
- 4 teaspoons grated orange peel
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 jar (18 ounce) Peach preserves
- 2 teaspoons lemon juice
- 1 teaspoon lemon peel
In a large bowl, cream butter, sugar until light and fluffy. Beat in egg and extract. Combine flour, orange peel, baking powder and salt: gradually add to the butter mixture and mix well. Set aside 1/3 of the crust mixture for topping.
Press remaining crust mixture into a greased 9x13 pan. Combine preserves , lemon juice, and peel; spread evenly over crust.
Crumble remaining crust over the top. bake at 350 for 35 to 45 minutes or until golden brown. Cool on wire rack. Cut into squares and yields 2 dozen.
