Southwest Shrimp & Corn Chowder

Ingredients

  • 2 TBL butter
  • 1 C chopped green onions
  • 1/2 C chopped red bell pepper
  • 2 TBL finely chopped serrano chile (abt 1 small)
  • 1 (4.5oz) can chopped green chilies
  • undrained
  • 3 TBL flour
  • 1 1/2 C milk (2% reduced fat)
  • 1 1/2 C chicken broth
  • 1 1/2 C frozen Southern-style
  • hash brown potatoes, diced
  • thawed
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1 (15.25-oz) can whole-kernel corn
  • w/ red & green peppers, drained
  • 1 lb peeled & deveined sm. shrimp
  • 2 TBL chopped fresh cilantro

Preparation

Step 1


melt butter in lg dutch oven over med-high heat
add onions, bell pepper & serrano chile to pan
saute 2 min or until tender, stirring frequently
add canned chiles to pan - cook 1 min

add flour to pan - cook 1 min, stirring constantly
stir in milk & next 5 ingredients 9through corn)
bring to boil
cook 5 min or until slightly thick

stir in shrimp
cook 1 min or until shrimp are done
remove from heat
stir in cilantro
