Country Meat Loaf with Tomato Relish

Ingredients

  • Cook 10 min then add:
  • Tomato Relish
  • 2 Tbls. olive oil
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 Lg. onion, diced
  • Heat in skillet over medium heat and carmelize
  • 2 red bell peppers, diced
  • add to the above and cook until soft.
  • 2 tomatoes, seeded and chopped1/4 chopped flat leaf parsley
  • 1 tbsp. worchestershire sauce.
  • 12 oz. Ketchup
  • cook until heated through (5 min.)
  • SET THIS ASIDE.
  • fOR mEAT LOAF.
  • 1 1/2 lbs. ground beef
  • 1 pound ground pork
  • 1/2 cup bread crumbs
  • 3 eggs
  • salt and pepper
  • Mix in large mixing bowl and add 1/2 of the relish mixture. Mix well.

Preparation

Step 1

Put in 9X5 loaf pan. Spoon spme of the tomato relish on top. Plae loaf pan on cookie sheet and place in 350 degree oven.
Bake for 1 to 11/2 hours. Remove when loaf pulls away from sides of pan. Cool slightly. Cut into large slices and serve with remaining relish.
