Tomato Corn Chowder

Ingredients

  • 1 tbsp. bacon drippings
  • 1 large onion, chopped
  • 1 can (15-1/4 ounce) whole kernel corn, undrained
  • 1 can (15-1/4 ounce) cream style corn
  • 2 cans (14-1/2 ounces each) diced tomatoes, undraind
  • 2 cans (15 ounces) diced potatoes, drained
  • If using fresh potatoes, 4 medium peeled and diced.
  • salt & pepper to taste.
  • May have to add a little water.

Preparation

Step 1

In the drippings, add onion, the corn, tomatoes and potatoes. Cook in slow cooker on low 2 - 3 hours. Sprinkle with bacon if cooked bacon for drippings to season.
Yield: 9 servings.
