Fruit with Rum Drizzle

Ingredients

  • 8-10 6" skeweres (wood or metal)
  • 2 bananas, cut into 1/2" slices
  • 1/2 pineapple, peeled & cut into 1"
  • pieces
  • 2 star fruit, cut into 1/2" pieces
  • 2 T sugar
  • 1/4 t ground cinnamon
  • 2 T dark rum

Preparation

Step 1

Soak wooden skewers in hot water for 30 mins. Toss banana slices with lemon juice. Thread banana, pineapple and star fruit alternately onto skewers. Place on a wire rack in a foil-lined broiler pan. Cover & chill up to 8 hrs. Preheat oven to broil. Combine sugar and cinnamon; sprinkle over fruit. Broil 4" from heat 5 mins on each side until lightly browned. Drizzle with rum.
