Ingredients
- 2 T. olive oil
- 4 (6 oz) tilapia fillets
- Salt & Pepper
- 2 Red bell peppers, thinl ysliced
- 1 onion, thinly sliced
- 1/2 cup pitted green oolives
- 1/2 cup fresh flat-leaf parsley, chopped
- 2 T. fresh lime juice
Preparation
Step 1
1. Heat 1 T. of the oil in a skillet over medium-high heat. Season the fish with 1/4 t. each salt and pepper and cook until opaque throughout, 4 to 5 minutes per side.
2. Meanwhile, heat the remaining T. of oil in a second learge skillet over medium-high heat. Cook th epeppers and onion, stirring often, until tender, 8 to 10 minutes. Stir in the oives, parsley, lime juice, and 1/4 t. each salt and pepper. Serve with the fish.
