Vanilla Sugar Cookies

Requires refrigeration after mixing.

Ingredients

  • 1 C soft margarine
  • 2/3 C sugar
  • 1 Tbs vanilla
  • 1 egg
  • 2 1/2 C flour
  • Sugar Frosting
  • 2 C powdered sugar (1 box)
  • 1 tsp vanilla
  • 2 1/2 Tbs water (add one Tbs at a time until the consistency you want.)
  • Food Coloring

Preparation

Step 1

Preheat oven to 325 degrees.

Cream sugar and butter. Add other ingredients one by one and beat between each one.

Cover and refrigerate until firm (about 2 hours).

Roll between two sheets of waxed paper and cut into shapes.

Bake for 12-15 minutes (mine take 13 minutes) or until edges are barely brown. Cookies will come out looking like dough, but will be soft!

Frosting:
Mix well and spoon on, drizzle, or ice on. It should be smooth and shiny. Let dry. (Mine take overnight to dry.)

Yields about 25 medium-sized cookies.
