Ingredients
- 2 packages of Cream Cheese, Softened
- 3/4 C Sugar
- 2 Eggs
- 1 Tbs Lemon Juice
- 1 tsp Vanilla
- 24 Vanilla Wafer Cookies
- 24 Cupcake Liners
Preparation
Step 1
Preheat oven to 350 degrees
Put 1 vanilla wafer in each cupcake liner, flat side down. (It’s the crust!) Mix cream cheese and sugar until blended. Add eggs one by one until blended. Add lemon juice and vanilla. Spoon into Cupcake liners.
(Makes 24 with a cherry topping, or a good 18 full sized plain.) If making 24, fill ½ to ¾ full.
Bake for 15 to 20 minutes or until set. Chill for four hours or overnight. Can top with any pie filling (or put them out for guests to choose their own topping!)
