Ingredients
- 4 lg eggs
- 3/4 c grated asiago cheese
- 1 T chopped fresh rosemary
- 1/4 t kosher sale
- 1/4 t ground black pepper
- 1/8 t ground red pepper
- 3 T EVOO
- 1 Vadalia onion, chopped (sweet onion)
- 8 oz pkg sliced baby Bella mushrooms
- 6 oz bag fresh baby spinach
- 4 oz pkg goat cheese, crumbled
- Garnish: fresh rosemary

Preparation
Step 1
Preheat oven to 375. In lg bowl whisk together eggs, asiago, rosemary, salt, black pepper & red pepper. Set aside.
In 10" cast-iron skillet, heat EVOO over med heat. Add onion; cook, stirring often, until tender, about 3 min. Add spinach & cook, stirring occasionally until wilted, about 5 min. Add egg mixture to onion mixture, whisking to combine. Sprinkle with goat cheese.
Bake until golden brown & set, approx. 30 min, let cool in pan for 5 min. Garnish with rosemary, if desired. Serve immediately.
