Ingredients
- Kernels of 4 ears of corn, cut off cob
- 1 (15-oz.) can lower-sodium black beans, drained and rinsed
- 1 small red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- Juice of 1/2 lemon
- 2 ounces queso fresco, crumbled
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
