Southwestern Corn Salad

Ingredients

  • Kernels of 4 ears of corn, cut off cob
  • 1 (15-oz.) can lower-sodium black beans, drained and rinsed
  • 1 small red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1/2 lemon
  • 2 ounces queso fresco, crumbled
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt

Preparation

Step 1

Mix all ingredients together in a large bowl. Adjust seasoning to taste. Refrigerate before serving if desired.
