Carrots with Black Sesame and Ginger

Ingredients

  • 2 T EVOO
  • 2 t finely minced fresh ginger
  • 4 large carrots cut into matchsticks (about 4c)
  • coarse sea salt
  • couple drops of hot toasted sesame oil
  • 1 t soy sauce
  • 1 T toasted black sesame seeds

Preparation

Step 1

Heat EVOO in large nonstick skillet set over high heat. Add ginger and cook, stirring into the oil until it becomes fragrant, just 30 seconds or so. Add carrots and stir to combine with the gingery oil. Add a big pinch of salt and 1/4 c water and turn heat down to med-high. Cook until carrots just begin to soften and water evaporates, 4-5 mins. Stir in sesame oil, soy sauce and sesame seeds and serve.
