Italian Cream Cake (Nanny)

Ingredients

  • 1 tsp baking soda
  • 1 C buttermilk
  • 5 eggs, separated
  • 2 C sugar
  • 2 C flour
  • 1 stick butter
  • 1/2 C Crisco
  • 1 tsp vanilla
  • 1 C coconut
  • 1 C chopped nuts
  • Icing
  • 8 oz cream cheese
  • 1 stick of butter
  • 1 tsp vanilla
  • 1 box of powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees

Combine buttermilk and soda. Set aside.

Beat 5 egg whites until stiff with peaks. Set aside.

Cream sugar with 1 stick of butter and Crisco. Add egg yolks one at a time, beating after each one well.

Add buttermilk, and flour. Beat until smooth, but do not overbeat.

Stir in 1 tsp vanilla and egg whites. Gently stir in coconut and nuts

Grease and sugar two or three pans. Bake for 30-45 minutes.


Icing will make PLENTY of icing. Use as much as needed to “glue” layers together. You will have plenty left for icing.
