Lemon Ice Box Pie (Betty)

Ingredients

  • 3 eggs, yolks only
  • 1/2 C lemon juice
  • 1 can Eagle Brand
  • Butter
  • 1 box of vanilla wafers
  • 6 egg whites
  • 1 1/2 C sugar

Preparation

Step 1

Preheat oven to 350 degrees.

Melt a good amount of butter in the bottom of your pie plate. Crumble about a dozen vanilla wafers and sprinkle over butter. Press to make a crust. Add wafers on their edges around the sides of the pie plate.

Beat yolks and lemon juice. Add condensed milk and beat again. Pour into homemade crust.

Top with meringue and bake until meringue browns.

Note: Store in refrigerator after it cools.
