Gnocchi

Ingredients

  • 1 1/2 lbs. potatoes
  • 1-1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pepper

Step 1

Cover the potatoes with water and boil until tender. Drain, peel and mash while still warm. Keep adding flour while kneading until smooth, soft and a little sticky. Shape into role the thickness of your finger and cut into 3/4 inch pieces on a lightly floured board. Press each piece lightly with floured fork or fingertips while rolling slightly toward you to make shell-like indentations n center.
Drop a dozen or so at a time into 6-8 quarts of rapidly boiling slated water and cook until they rise to the surface. remove with a slotted soon, drain well and serve hot with tomato sauce or butter and grated parmesan cheese.
