Red beans and rice

Ingredients

  • Red beans and rice:
  • 32 oz vegetable broth
  • 2 C water
  • 2 C dried rice, cooked
  • 1/2 C chopped onion
  • 1 t italian seasoning
  • 1 t cumin
  • 1 t minced garlic
  • 1/2 t seasoned salt
  • 15 oz can red beans, drained and rinsed
  • 1 large tomato, chopped
  • 1/2 pkg meatless bacon, cooked and crumbled
  • 1/4 C chopped cilantro
  • 1/2 C shredded parmesan cheese
  • Salad:
  • 10 oz shredded carrots
  • 1/2 C raisins
  • 1 apple diced
  • 1/4 C mayonnaise
  • 1 T lemon juice

Preparation

Step 1

In large skillet, bring broth and water to boil. Stir in cooked rice, onion, seasonings, minced garlic, and seasoned salt. Simmer for apx 15 minutes. Stir in beans, tomato, cooked bacon and cilantro. Top with cheese and serve.
Combine carrots, raisins, apple, mayo and lemon juice in large bowl and toss well.
