Ingredients
- 6 med boneless skinless chicken breast halves (1 1/2 lbs)
- 1/2 c flour
- 1/2 t salt
- 2 t lemon pepper seasoning
- 1/3 c butter
- 2 lemons, sliced
- 2 T lemon juice
- hot cooked rice or pilaf (optional)
Preparation
Step 1
Place each chicken breast half between two pieces of plastic wrap. Pound lightly into rectangle about 1/4 - 1/8" thick. Remove plastic wrap. In shallow bowl, combine the flour and salt. Coat chicken breasts with flour mixture. sprinkle chicken breasts with lemon.
In 12" skillet cook chicken in hot butter, half at a time, over med-high heat for about 3 min on each side or until brown and no longer pink. Remove chicken. Add lemon slices to skillet; cook 2-3 min or until lightly browned, turning once. Return all chicken to skillet, overlapping chicken slightly. Drizzle lemon juice over chicken. Cook 2-3 min more or until pan juices are slightly reduced. Serve chicken, lemon slices, and pan juices over hot cooked rice or pilaf.
