Ingredients

  • 4 lbs. country-style pork ribs
  • 1/2 t salt
  • 1/2 t fresh black pepper
  • 1 T canola oil
  • 1/4 C water or wine
  • 3/4 C prepared BBQ sauce
  • 2 T molasses
  • 1 t smoked paprika
  • 1/2 t ground coriander
  • 1/2 t dried thyme

Step 1

Pat ribs dry & season all over with salt & pepper. Heat oil in lg. Heavy skillet on med high. Add ribs & sear until deeply browned all over, 3 - 4 min./ side ( cook in batches or use 2 skillets. Transfer ribs to 4 qt. slow cooker.

Add water/wine to skillet, scraping pan bottom Remove pan from heat & stir in remaining ingredients. Pour sauce over ribs & turn until coated evenly. Cover & cook on low for 4 hrs. Or high for 2 1/2 hrs. Until very tender.

When tender, heat broiler. Line baking sheet with foil & transfer ribs to sheet, dabbing some sauce from cooker onto meat. Broil until ribs are brown & crispy on that side, 3 min. Flip, dab with sauce & broil that side. Remove from broiler & dab with final layer of sauce. Serve with remaining sauce.

BBQ sauce: 1 C ketchup, 2 T brown sugar, 2 T cider vinegar, 1 T mustard, 1 T Worcestershire sauce, 1 t smoked paprika, 3/4 t smoked salt, 1/2 t garlic powder, 1/4 t onion powder, 1/4 t ground pepper, 1/4 t cayenne in sm pan. Bring to boil; reduce heat to low & simmer 20 min. Cool, cover & refrigerate up to month. Makes 1 1/2 C.
