Mexican Tortilla Casserole

Ingredients

  • 1 1/2 lb ground beef
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 can (15 oz) tomato sauce
  • 1 can (4 oz) green chilies, drained
  • 1 small onion, chopped
  • 10 six inch soft corn tortillas, cut into 1/2 pieces
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 tomato, chopped

Preparation

Step 1

Crumble ground beef into 2-quart oval casserole. Cover with wax paper. Microwave on high for 7-8 minutes, or until meat is no longer pink, stirring once, drain. Add cumin, chili powder, tomato sauce, chilies and onion. Stir in tortillas.

Microwave on high for 6-7 minutes, or until hot, covered with wax paper. Let stand covered for 3 minutes.

Serve with sour cream, lettuce, cheese, lettuce and tomato.
