Ingredients

  • 1 1/2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 8 ounces crimini mushrooms cleaned, trimmed, and quartered - (abt 2 1/2 cups)
  • 4 ounces shiitake mushrooms cleaned, stems
  • removed, caps thickly sliced - (abt 1 1/2 cups)
  • 2 teaspoons finely-chopped garlic
  • 2 tablespoons good-quality port wine
  • 1 teaspoon chopped fresh thyme leaves (or 1/4 tspn dried thyme)
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly-ground black pepper
  • 4 ounces oyster mushrooms cleaned, and stems removed

Preparation

Step 1

In large skillet, heat oil over medium heat. Add onion; cook and stir until soft, about 3 minutes.

Add crimini and shiitake mushrooms and the garlic; cook and stir until lightly browned, about 5 to 7 minutes.

Add 1/2 cup water, 1 tablespoon port, thyme, salt and pepper; cook until liquid evaporates, 3 minutes.

Add oyster mushrooms; cook 2 minutes longer.

This recipe yields 4 servings (about 2 cups).
