Slow Cooker Sausage and Peppers

Ingredients

  • 1 1/4-1 1/2 lbs fresh Italian sausage
  • 3 bell peppers, sliced
  • 1 large yellow onion, sliced
  • 1 15-oz can Italian style diced tomatoes, slightly drained
  • 1 8-oz can tomato sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon pesto, optional
  • 1 tablespoon red wine vinegar, optional

Preparation

Step 1

Preheat a skillet over medium-high heat. Add your sausages to pan, cook on each side until browned, about 4-5 minutes total. Chicken sausage does not need to be cooked through. Set aside.

Add sliced peppers, onions, tomatoes, sauce, seasoning, pesto and vinegar into your slow cooker. Gently stir to combine. Add your sausages to top of vegetable and sauce mixture. Cover and cook on low for 6-8 hours.

Serve over pasta or with Italian bread.
