Ingredients

  • 2 c white spelt flour or all purpose gluten free flour
  • 1 c high quality cocoa powder
  • 1 1/2 T baking powder
  • pinch fine sea salt
  • 1/2 c vegetable oil
  • 1 c good quality maple syrup
  • 1/2 c brown rice syrup
  • 1/2 c strong brewed coffee
  • 1/2 c soy or rice milk
  • 1 T pure vanilla extract
  • To make "Power Brownies"
  • 4 servings plain whey protein powder
  • 1/2 c ground flaxseed
  • Add to batter and bake as directed below.

Preparation

Step 1

Preheat oven to 350. Line a baking dish (we used 9x11 dish that's 2 in high) with parchment paper and lightly oil with a neutral oil.

Sift flour, cocoa, baking powder and salt together in a large mixing bowl. In a separate bowl whisk together oil, syrups, coffee, milk and vanilla. Mix wet ingredients into the dry ones being careful not to overbeat (that makes tough brownies!) Pour batter into prepared baking dish. Bake 30 mins or until a toothpick comes out with just a bit of chocolate on it. Let brownies cool before cutting into squares. Serve right away or store in an airtight container.
