Ingredients
- 1 cup half-and-half
- 1 cup sour cream
- 1/2 cup shredded Swiss cheese
- 1/3 cup ricotta-cheese
- 2 eggs
- 1/4 cup chopped parsley
- 1 tablespoon crushed dried basil leaves
- 1 (9 ounce) package refrigerated fresh angel hair pasta, divided
- 1 (10-ounce) can Ro-Tel tomatoes
- 1 pould medium shrimp, peeled, deveined, and divded
- 3/4 cup shredded Mexican or prizza blend cheese
Preparation
Step 1
Preheat oven to 350F. Butter a 9x13-inch baking pan or 3-quart casserole. Mix together half-half, sour cream, Swiss and ricotta cheeses. eggs, parsley, and basil in mixing bowl. Mix with pasta, tomatoes, and shimp. Spread mixture into prepared pan. Top with Mexican or pizza blean cheese. Bake 30 minutes or until bubbly. Let stand 10 minutes.
