Creamy Mushroom Salad

  • 3 apples
  • 1 1/2 cups diced celery
  • 6 Swiss brown mushrooms
  • Lettuce leaves
  • 2 cups alfalfa sprouts
  • 1 cup purple grapes
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • Salt to taste
  • Freshly-ground black pepper to taste

Step 1

Cut the unpeeled apples into quarters and remove the cores. Dice roughly. Slice the mushrooms thinly. Chop the walnuts roughly. Mix the mayonnaise and yogurt together and season.

Put the apples, celery, mushrooms and walnuts into a bowl and fold in the dressing. Line a serving dish with well-washed lettuce and spread the sprouts around the outer edge. Pile the salad in the centre and garnish with the grapes.

This recipe yields 4 to 6 servings.
