Mini Pecan Pie Muffins

These little gems taste just like pecan pie! See if you won't agree.
Ingredients
- 1 cup light brown sugar, packed
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped pecans
- 6 tablespoons butter
- 2 large eggs
- 1/2 teaspoon vanilla extract
- Pecan halves for tops, optional

Step 1
Preheat oven to 375 F. Generously spray the cups of (2) mini muffin pans with cooking spray. (Wipe tops of pans clean with a paper towel.)
In a small bowl, microwave the butter until just melted; set aside to cool slightly.
In a mixing bowl, combine the brown sugar, flour, baking powder, and salt; then add the chopped pecans. Make a well in the center. Set aside.
In another mixing bowl, whisk the eggs until frothy; whisk in the melted butter and vanilla.
Pour egg mixture into the flour mixture and stir just until thoroughly moistened.
Fill muffin cups 2/3 full; top each with a pecan half if desired.
Bake for 12-15 minutes or until center tests done with a toothpick.
Cool in pans for 2 minutes, then run a knife around the edges to loosen and remove to a cooling rack. Makes 24-30 mini muffins.
((NOTE~ Non-stick pans are highly recommended since these have a tendency to stick even when generously sprayed.))
