    Cup Bacos

  • 1/4

    Cup scallions

  • 1 Dozen

    eggs, beaten

  • 4

    Oz sliced mushrooms

  • Cheese Sauce:

  • 1/4

    Cup melted butter

  • 1

    Cup bread crumbs

  • 1/8

    Tsp paprika

  • 2

    Tbsp butter

  • 2 1/2

    Tbsp flour

  • 1/2

    Tsp salt

  • 2

    Cup milk

  • 1/8

    Tsp pepper

  • 1

    Cup shredded cheese

Directions

DIRECTIONS 1 Saute scallions in 3 Tbsp butter. Add eggs, sliced mushrooms, and bacos and cook until eggs are set. 2 To make cheese sauce, melt butter, blend in flour and cook for 1 minute. Gradually add milk and cook over medium heat until thickened. Add salt, pepper and cheese, stirring until cheese melts and mixture is smooth. Stir cheese sauce into eggs. Spoon mixture in 13 x 9 x 2 pan. Combine 1/4 Cup butter, 1 Cup bread crumbs and sprinkle over eggs. Sprinkle with paprika. 3 Chill overnight 4 Bake at 350 F for 30 minutes
