PEPPERCORN PORK TENDERLOIN

Ingredients
- 1 lb. well trimmed pork tenderloin cut into 1/4" slices
- 1 cup chicken broth
- 1/4 cup white wine
- 1 tbsp. cornstarch mixed with 1 tbsp. water
- 1 tbsp. coarsely crushed peppercorns
- 2 cloves garlic, minced
- 1 tsp. dry mustard
- 2 cups hot cooked fettucini

Preparation
Step 1
Spray a nonstick skillet with cooking spray. Heat skillet over medium high heat. Add pork. cook for 10 to 12 minutes or until meat is golden brown on both sides. stirring frequently. Remove pork from skillet. cover to keep warm. Set aside
Combine remaining ingredients, except fettucini, in same skillet. Cook over medium heat for 3 - 4 1/2 minutes, or until sauce is thickened and translucent. stirring constantly. Add pork. Cook for additional 1 to 2 minutes or until hot. stirring constantly. Serve pork mixture over pasta
