Cajun Portabella Sandwich
- Freshly-ground black pepper
- Freshly-ground white pepper
- Garlic powder
- Cayenne pepper
- Parsley flakes
- Portabella mushrooms whole (one per sandwich)
In a mixing bowl, add together equal parts of black pepper, white pepper, garlic power and salt. Use 1/2 part of cayenne pepper, then add an amount equal to the total of the ingredients of paprika. Add a small amount of parsley flakes, mix well and set aside.
Wash as many whole mushrooms as needed (one per sandwich). Leave damp. Lay in seasonings and cover so that both sides are well covered.
Place butter in pan or on griddle and then place mushroom on pan. Cook each side for about 2 minutes, maybe longer, depending on type of pan and level of heat.
Best on sesame seed bun, kaiser works well also. Add lettuce and tomato, if desired.
