Ingredients
- 1 1/2cups1 1/2 cups unsweetened apple juice
- 22 whole boneless, skinless chicken breasts
- 3cups3 cups cooked rice
- 1 1/2cups1 1/2 cups seedless green grape, halved
- 1cup1 cup chopped unpeeled apple
- 1/2cup1/2 cup chopped celery
- 3/4cup3/4 cup slivered almonds, divided
- 1/2cup1/2 cup chopped water chestnuts
- 1cup1 cup mayonnaise
- 1/2tsp1/2 tsp seasoned salt
- 1/4tsp1/4 tsp ground cinnamon
- Fresh spinach or lettuce leaves
- Apple slices for garnish

Preparation
Step 1
Bring apple juice to a simmer in a deep saucepan over medium heat; add chicken. Cover; simmer about 30 minutes or until tender.
Remove chicken from pan; cool. (Reserve broth for another use if desired.) Dice chicken.
Gently toss chicken with rice, grapes, apple, celery, 1/2 of the almonds and the water chestnuts in a large bowl. Combine mayonnaise, seasoned salt and cinnamon in small bowl; add to chicken mixture and toss lightly. Cover, refrigerate at least 30 minutes.
To serve, spoon chicken mixture onto lettuce leaf lined platter. Sprinkle with remaining 1/4 cup almonds. Garnish with apple slices.
