Marinara Sauce, Really Simple

I was hungry for marinara sauce and pasta -- had the pasta, but not the marinara, so I whipped up this super simple reciipe

Ingredients

  • 3 cans Muir Glen whole organic tomatoes
  • 1 medium/large sweet onion
  • 5 cloves garlic
  • parsley (definitely fresh if you have it; otherwise, dried)
  • oregano
  • Bay leaf
  • Also add basil -- I didn't have any when I "created" this but would definitely include (again, fresh if you have it; otherwise dried)
  • olive oil
  • butter

Preparation

Step 1

Chop onions medium size chop

Chop garlic, small chop

On stovetop, mix oil (one turn of the pan) and about 2 Tbsp butter over medium heat, just until it begins to sizzle lightly

Saute onions and garlic in pan for 8-10 minutes

Place tomatoes in large glass bowl (I used my 4 cup pyrex cup). Use immersion blender to blend tomatoes. You want it to be slightly chunky, not totally smooth like Tomato sauce.

Add to onion/garlic mixture. Add salt, pepper, oregano and parsley (to taste) bay leaf (if using)to mixture. Simmer on low medium heat for about 2 hours.

Serve with pasta of your choice
