Rhubarb Slush

Ingredients

  • 1 lb. rhubarb chopped (3 cups)
  • 1 cup water
  • 1/3 cup sugar
  • 1 cup vodka
  • 6 oz. frozen pink lemonade concentrate, thawed
  • 1 1-liter bottle lemon lime soda (Sprite)

Preparation

Step 1

Combine rhubarb, water and sugar and bring to boil. Reduce heat, cover
and simmer 5 minutes til tender. Cool.
Once cooled, Puree in blender.
Add vodka and lemonade concentrate and stir well.
Pour into 8-inch square pan and freeze several hours or overnight (I have had it over a week)
Before serving smush up the mixture with fork (let thaw a bit if it's too hard-not likely).
Scoop about 1/2 cup in glass and pour over about 1/3 cup Sprite. Enjoy.
