Ingredients
- 3/4 c. firmly packed brown sugar
- 1/3 c. water
- 1/3 c. light corn syrup
- 2 Tb. butter
- 1/8 tsp. salt
- 1/2 tsp. rum extract
- vanilla ice cream
- chopped peanuts
Preparation
Step 1
Combine 1st 5 ingredients in a small saucepan; cook over medium heat, stirring until sugar dissolves. Reduce heat to low; cook, without stirring, until a candy thermometer reaches 230 degrees. Remove from heat, and cool slightly. Stir in rum extract. Serve over ice cream. Sprinkle with chopped peanuts.
Yield: 1 cup
