  • 8 oz cheese spread (pasteurized, melted)
  • 2/3 cup 2% low-fat milk
  • 4 cups potatoes (diced)
  • 10 oz ham (diced 2 cups)
  • 8 oz cauliflower (frozen)
  • 16 oz mixed vegetables (frozen, thawed pre-mixed or what you have on hand i like a mix of corn spinach and artichoke hearts)
  • 1/4 cup onion (chopped)
  • sea salt (taste)
  • pepper (taste)
  • 1 cup low fat cheddar cheese (swiss, monterey jack, shredded)
  • 1 cup cracker crumbs



Step 1

1 Preheat oven to 350°F.
2 Boil potatoes for about 10 minutes; drain.
3 In a large bowl, combine cheese spread and milk.
4 Stir in potatoes, ham, vegetables, and onion; season with salt and pepper.
5 Pour into 13x9-inch casserole dish.
6 Bake, covered, for 45 minutes, stirring occasionally.
7 Sprinkle shredded cheese and cracker crumbs on top.
8 Bake, uncovered, until cheese is melted.
