Ingredients
- 1 (3 lb) boneless pork roast cut into 2 inch pieces
- 1/2 tsp salt
- 2 cans diced green chili peppers
- 3 cloves garlic
- 1/4 cup chipotle sauce
- 3 1/4 cups water, divided
- 1 1/2 cups uncooked white rice
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
- 1 bottle chipotle sauce
Preparation
Step 1
Put roast, salt, chile peppers and garlic and 1/4 cup chipotle sauce. Cover and cook on low for 7 hours.
Prepare rice with lime juice and mix in cilantro when done. Shred pork and mix in more chipotle sauce if needed.
Either serve over rice or in tortilla with guacamole, grated cheese, and rice with lime and cilantro.
