Ingredients

  • Sift Together:
  • 3 eggs Bake 350º
  • 1 Cup oil
  • 2 Cups white sugar
  • 2 teas. vanilla
  • 2 Cups unpeeled shredded Zucchini
  • 1 8 1/4 oz can crushed pineapple, well drained
  • 2 Cups Flour
  • 2 teas. baking soda
  • 1/4 teas. baking powder
  • 1 teas. salt}
  • Dash Nutmeg
  • 1 Cup chopped nuts
  • 1 Cup chopped Dates, optional
  • 1 Cup Raisins, optional

Preparation

Step 1

Beat eggs, oil, sugar and vanilla until thick.
Stir in remaining ingredients. Mix well.
Pour into 2 greased loaf pans and bake for
1 hour. If using coffee cans bake 1 1/2 hours.
Once baked,
leave in pans 30 minutes before removing.
