Cheese & Onion Potatoes

Ingredients

  • GARNISH:
  • 6 baking potatoes (about 12 ounces each), scrubbed
  • 2 medium onions, cut into 1/8 inch slices
  • 3 tablespoons butter
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • ................................
  • 1 cup sour cream
  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup chopped fresh parsley

Preparation

Step 1

Preheat oven to 375°F. Cut six 10-inch squares of aluminum foil. Spray inside of squares with nonstick cooking spray.


Cut each potato into 1⁄4-inch slices. Place 1 potato's worth of slices on each foil square. Top each potato with one-sixth of the onions.


Combine butter, garlic salt, salt and black pepper in a small bowl and mix well.


Place 1⁄2 tablespoon butter mixture on each potato. Wrap each potato with foil.


Bake until potatoes are tender, about 50 to 55 minutes. Open foil packets. Top each potato with sour cream and Cheddar. Sprinkle with parsley.
