Mexican chicken salad

Ingredients

  • Diced chicken ( both canned and fresh)
  • Mayonaise
  • Salt and pepper
  • Capers
  • Diced jalapenos
  • Srichacha
  • Tortilla chips
  • Green onions diced
  • Diced grillef white or spanish onions

Preparation

Step 1

Heat chicken 20 to 30 seconds so it can absorb dressing better

Mix mayo with chicken

Add srichacha until slightly red

Add more mayo to decrease the red

Combine remaining ingredients except jalapenos

Top with jalapenos

Serve over tortilla chips
