Ingredients
- 1 lb ground bison (or ground beef)
- 1 T. olive or coconut oil
- 1/4 yellow onion, chopped
- 3 green chilis, roasted, peeled and chopped
- 1 large red bell pepper, seeded and diced
- 3 cloves garlic, minced
- 1 T. cumin
- 1 T. green chili powder
- pinch of sea salt
- pinch of pepper
- 14.5 oz can organic diced stewed tomatoes
Preparation
Step 1
Heat oil on medium heat in a large pan. Add veggies and cook for about 2 minutes. Add meat and seasonings and cook for 10 minutes, stirring often. Add stewed tomotoes and cook another 10-15 minutes or until sauce thickens.
Place on top of mixed greens for a great taco salad, in a torilla or eat it with some eggs for breakfast. Add avocado for an extra kick of healthy fats.
