Cream of Tomato, Basil Soup

Ingredients

  • 1 T. butter
  • 2 C. chicken broth
  • 1 (15 oz) can of diced tomatoes
  • 1 (11 oz) tomato puree
  • 1/2 C. plain mashed potatoes
  • 1 C. half and half
  • 3 T. fresh basil, chopped
  • salt and pepper to taste

Preparation

Step 1

Melt butter in heavy saucepan. Add chicken broth and tomatoes and simmer until the mixture is reduced by half. Decrease heat and add tomato puree, mashed potatoes and half and half. Use an immersion blender or food processor to puree the mixture until smooth. Stir in chopped basil and season to taste.
