Shrmp and Scallop Salad with Mandarin-Poppyseed Dressing

Ingredients

  • 4 ozs bay scallops
  • 1 cup (15oz) mandarin orange segments
  • 1/4 cup Poppy seed salad dressing
  • 8 ozs. cooked peeled and deveined bay or other small shrimp
  • 4 cups prewashed baby arugula

Preparation

Step 1

1) In a small saucepan f simmering water, cook scallops for 3 to 4 minutes. Drain scallops. Immediately place scallops in a bowl of ice water for 1-2minutes. Drain; set aside.

2) Drain orange segments, reserving 2 T juice. Set orange segments aside. In a med bowl, combine reserved juice and poppy seed salad dressing. Add scallops, orange seegments, and shrimp to dressing mixture; toss to continue.

3) Divide arugula among 4 salad plates. Top with scallop mixture.
