Lentil Bean Chili

Ingredients

  • 1 (1 oz. envelope) dehydrated onion soup mix(from 2 oz pkg.)
  • 4 C. water or vegetable broth
  • 1 (16 oz) can chickpeas, rinsed and drained
  • 1 (15 to 19 oz)can chili beans with sauce
  • 1 (14 1/2 oz) chopped stewed tomatoes with juice
  • 1 C. dried lentils, rinsed and drained
  • 1 celery rib, coarsely chopped
  • 1 T. chili powder
  • 2 t. cumin
  • 1 clove garlic, minced
  • 1/4 t. red pepper flakes

Preparation

Step 1

In large stock pot, combine everything. Bring to boil; reduce heat and simmer; covered 20 mins. or until lentils are almost tender; stir occasionally. Remove cover; simmer 30 mins. longer or until liquid is almost absorbed and lentil are tender; stir occasionally. Serve immediately.
