Ingredients
- 1 1/2 cups flour
- 1 1/2 cups sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup graham cracker crumbs
- 1 tsp. baking soda
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1/3 cup oil
- 2/3 cup milk
- 2 tsp. vanilla
- 2 eggs
- 2/3 cup boiling water
- Marshmallow Frosting
- 3 egg whites
- 1 3/4 cups sugar
- 2 tsp. light corn syrup
- 2 tsp. vanilla
- 1 1/2 cups mini marshmallows
Preparation
Step 1
Preheat oven to 350. Line 24 muffin cups with cupcake liners. Stir together flour, sugar, cocoa, graham cracker crumbs, baking soda, baking powder, and salt in a large bowl. Add oil, milk, vanilla, and eggs; beat on medium speed 2 minutes. Stir in boiling water to make a thin batter.
Pour batter evenly into liners. Bake 18-20 minutes or until toothpick inserted into centers comes out clean. Cool completely in pans.
Pipe or spread top of each cupcake with Marshmallow Frosting. If desired, garnish with chocolate shavings.
Frosting:
Place about 3" of water in very large pot and bring to high simmer. Place egg whites, sugar, 1/3 cup water and corn syrup in heatproof metal or glass bowl fitted over pot of simmering water. Beat constantly with handheld mixer while over boiling water until stiff peaks form, 8-15 minutes. Remove from heat. Fold in vanilla, then marshmallows. Beat on high until marshmallows melt. Makes 2-3 cups.
