Berbere Seasoning/Rub

Ingredients

  • Ginger, ground 1 teaspoon
  • Cinnamon, ground 1/4 teaspoon
  • Cardamom, ground 1/2 teaspoon
  • Allspice 1/4 teaspoon
  • Coriander, ground 1/2 teaspoon
  • Fenugreek seeds, ground 1/2 teaspoon
  • Cloves, ground 1/2 teaspoon
  • Nutmeg, grated 1/2 teaspoon
  • Cayenne pepper 1 teaspoon
  • Paprika 1/2 cup
  • Salt 2 tablespoons
  • Black pepper, freshly ground 1 teaspoon

Preparation

Step 1

In a heavy saucepan, over low heat, toast for 4 to 5 minutes the ginger, cinnamon, cardamom, allspice, coriander, fenugreek seeds, cloves and nutmeg. Shake or stir to prevent burning.

Add the cayenne pepper, paprika, salt, and black pepper and continue toasting and stirring for 10 to 15 minutes more.

Cool and store in a tightly covered glass jar. This will keep in the refrigerator for 5 or 6 months.
